Ingredients:
- 1 egg
- 1/3 cup of flour
- 1/4 cup of dark brown sugar
- 1/4 cup pumpkin puree
- 1 tablespoon white sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 teaspoon of baking powder
Directions:
- Mix all ingredients together until it is well blended
- Microwave for 1 minute 15 seconds or until fluffy and golden brown

Apple pie in a mug
Ingredients:
- 1 large apple
- 2 tablespoons quick-cooking oats
- 3 tablespoons of flour
- 2 tablespoons of butter
- 2 tablespoons of brown sugar
- 1/4 teaspoon of cinnamon
- Pinch of salt
- 1 tablespoon orange juice
Directions:
- Peel the large apple and thinly slice
- Place the slices of apple into a large mug and microwave for 60 seconds
- Carefully remove from the microwave and stir in the remaining ingredients
- Microwave on increments of 30 seconds, stirring in between, for about 90 seconds

Easy 5-minute cornbread
Ingredients:
- 1/2 cup flour
- 1/2 cup cornmeal
- 2 tablespoons of white sugar
- 2 teaspoons of baking powder
- 1/4 teaspoons of salt
- 1 egg
- 1/2 cup milk
- 2 tablespoons of vegetable oil
Directions:
- Mix all the ingredients in a microwave-safe bowl until smooth
- Cook for 5 minutes, rotating the bowl at 3 minutes
- To check if it is done, insert a toothpick and see if it comes out clean if it does, you are good to eat. But if it comes out wet cook for longer in the microwave.
